Fall Festival 10K and FV Reunion

I had myself a busy weekend. On Satuday TH and I went to my work's weekend sloshball get together. That was fun, TH apparently is quiet gifted in the outfield. We then went to IKEA and did not walk away emply handed. Picked up a few organizers for TH's closet and some bathroom accessories. Sunday morning started off with the Corvallis Fall Festival runs. TH participated in the 5K. I did the 10K which started shortly after, so I wasn't able to see TH finish. This was mny first 10K outside of a triathlon and I was pretty nervous. It was rainy and early. I forget my watch so during the entire race, I didn't know what my pace was. I ran into an old friend of mine, BP and it was nice to see him, if even shortly. I finished and was pretty tired. My goal was to finish under 54minutes. Apparently I finished in 51:30. Not bad. I was happy with my time, but wish I trained more for the event. I have been slacking a ton with running and really any other part of my workouts. I woke up this morning and realized that I forgot to do my pushups last night!




TH did great in the 5K. Finished top 10 over all and was close to his PR back in high school 10 years ago!.

Monday night My elementary school class decided to have a reunion of sorts. Only a handful of my classmates showed up but it was so good to see everyone. I did not graduate high school with these people so I was particularily excited to see those I grew up with.

100 Pushup Challenge

A classmate of mine is doing this 100 Push up challenge program. I was intrigued. I was motivated and I am up for the challenge! Seeing that the weather is starting to suck I need more indoor workouts that aren't boring. I also need to work on strength training. According to my Google search, the challenge consists of 3 day a week workout with 6 sets. Each set is a number of push ups. That's it. I use to be able to do a ton of push ups in high school. not anymore. I'm thinking about including a week by week picture of my progress.... we will see about this. I intend on starting tonight. Join in and wish me luck!

MAC Dash SPrint Triathlon

TH, a friend, and I were over in Madras this weekend for the 2nd Annual Mac Dash Sprint Triathlon. This was more of a mini-tri because the swim was only 500m. This was the same distance of teh Beaver Freezer back in April. My goal going into the event was to just see an improvement upon my Beaver Freezer time of 1:31. For those who don't know, Madras is in central Oregon (by Bend) and it's gorgeous there. The morning was clear but cold. I was glad I didn't start until 9:20. TH started at 8:20, his friend ES, started at 7:30. I was able to see both TH and ES finish their swims and bikes. TH had a personal best in the swim and I was proud becuase I know how hard he worked to get better at swimming.

The Swim:

I was unable to find ES or TH before my swim so I headed over to the pool and warmed up. I was nervous because my 500M times in practice were a lot slower than they had been in the Beaver Freezer. I also haven't been training as much as I should have been. I only had to share the lane with one other person so we were able to split the lane. THe race started and I just tried to swim fast and not go out too strong. My lane buddy was about half a length ahead of me the entire time. When I finally got out of the pool, TH and ES were there to cheer me on. TH told me I had a time of 8:40. this totally got be pumped because this was a PR. All in all, a good swim.

The Bike:

I hadn't rode my bike since the last triathlon (Blue Lake). I was able to get some pointers from TH. Apparently the bike would be hilly. Well TH was right, the bike was full of hills. 13 miles went a heck of a lot faster then my usual 26ish miles in teh Olympic distance. I don't really remember what was going through my mind. I did feel a bit slow.

The Run:
Again with tips from TH, I was prepared to finish up the race with the run. Mile 1 included a giant hill. I wasn't too turned off by this since my Hood to Coast legs involved hills. Mile 2 was flat and took us around an open park. Mile 3 was stright down hill and around the track.

My overall time was around 1:22. I was stoked because I had a nearly 10 minute faster time that Beaver Freezer and this was a Much hillier course. My run time was also faster and I was happy with my split: 25min.

I ended up getting 2nd in my division, 6th overall women, and 48th overall (silly men).

Frosted Maple Nut Muffins SF, GF



Sorry blog-sphere for not updating. I started classes with my 2 1/2 hour commute each way so I've been plenty busy driving, homeworking, and working. For anyone dying to know, I survived Hood to Coast.
Clearly, this is pre-running enthusiasm.
I got home from work today planning on going for a run. It literally looked like a monsoon outside, so I decided to make cupcakes instead.






Frosted Maple Nut Cupcakes- SF and GF



Ingredients:


1/2 cup real maple syrup

1 cup rice milk

1 egg

1/4 cup grape seed oil

1 cup rice flour

1 cup millet flour

2 teaspoons xanthan gum

2 tablespoons flax meal

1/3 cup chopped walnuts



Beat liquid ingredients together using a stand mixer. Slowly add in flours, xanthan, and flax meal and return the mixer on high. Once the ingredients are thoroughly blended (it will be pretty liquid), pour into a well greased muffin tin. Sprinkle walnuts evenly over batter and bake for 22 minutes in a 425 oven.








Maple Nut Cream Cheese Frosting



Ingredients:


1 8oz package of neufchatel cheese at room temperature

1/3 cup pure maple syrup

2 tablespoons almond butter

1 teaspoon of cornstarch


Cream ingredients together until smooth. Spread on top of cooled cupcakes.
